Should I ever take insurance in blackjack?

No, you should never take insurance in blackjack unless you are a card counter. Insurance is a side bet that gives the casino a 7.4% advantage over the player, so it's not a good bet for players who do not count cards.

However, if you ARE a card counter, having a big bet out means that the count is high, and then, taking insurance is the correct play.

Therefore, you can use the general fallacy "insure the big hands, nevermind the small ones" to help your cover, and to pretend to be a ploppy.

Well, I guess that's technically true. I've only ever seen anyone buy insurance when the dealer is showing an ace.

The one thing I wish was listed was surrender. I can’t wrap my head around how it’s better to just give up your hand instead of just stand or hit it depending on the true count deviation or basic strategy.

with a 12, you hit it always and keep hitting it seeing more cards to help your  count unless you are near the shuffle card, insurance- only take it when count is high, always split nines except 7, 11 versus ten is double when count is high, if count is really low you keep hitting get more of low cards out of way, only hit 15 or 16 when count is really low, or better yet throw them in and take 1/2 bet off if casino surrounds, soft 18 - double down when count is really really low - or hit it to get low cards out. If you hold your cards in hand, and count goes low, keep hitting to get low cards out even if you go over 21. Just to get the low cards out of way. Then throw cards away so dealer can't see them.

I was playing Blackjack and the person next to me was saying how insurance is a sucker bet but he took even money.  When I pointed it out that he just purchased insurance, he argued with me saying he took even money, not insurance.

I only insure one hand aginst a ace and thats a 20 and take Even money depending on how many tens of came out.
